Vegan Nacho Cheese

Ingredients

  • 3 medium potatoes, peeled and cubed
  • 1 medium to large carrot, peeled and sliced
  • 1/2 cup nutritional yeast flakes
  • 2 tbsp chicken-style seasoning
  • 1 tsp salt
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 cup canola oil

Directions

Place potatoes and carrot in small saucepan and cover with water. Bring to boil and cook until soft. Place cooked potatoes, carrot, and water in blender along with rest of ingredients. Blend until creamy adding more water only if needed to keep contents blending smoothly.

To add a little spice you can add a jalapeno pepper to blender. The recipe came from Incredible Edibles from Teach Services. We use Bill's Best Chik'Nish instead of McKays for a creamier, more savory taste.
